... And the Grammy Goes To...

Sometimes I sit and wonder why we are not more in tune with ourselves as opposed to being in tune with the lively activities of others. I am a person who has been experiencing loss since the young age of five. I've lost family members, friends, lovers and many others.

Most of us are conditioned to feel depressed, without ambition and at a stand-still when we experience difficulties in our lives. As harsh of a reality as it may be, we are all here to ride our own horses, to fly our own planes, to push ourselves to the highest of heights. We need to start practising the expulsion of negative energy that surrounds our beings and explore better, our sense of pride, joy, fulfilment and most importantly, happiness. For everything and everyone around us, will one day disappear and we are the only ones that will ignite the individual achievement of leading a wholesome life.

HAVE THE BEST DAY EVER!

Best Love,

LIVING 101!

As I reflect on my youthful life, I am constantly taken back to my happy place, the kitchen. I think of the aromas that I was met with upon entering my home. The morning wake up-calls of the slight scent of breakfast. The sensations that filled my soul upon that first bite. The happiness of eating and exchanging food with other children at school. Pure happiness. The flare of colours, creative juxtaposition of ingredients and explosive surprises are some of the genius culinary traits that I associate with my mother, who is the inspiration of my life. Her ability to produce food from less than nothing was magical and watching her welcome people from all walks of life into our home in a loving, full-filling manner is what ignited my love for the Culinary world.
I feel lucky to have worked in various environments over the past five years, because it has allowed for me to take on this dream, with a clear view of what I want to do with my life. To me, being a chef is more than a career. It is a privilege, it is a lifestyle, it is a way of saving lives.

WHY CRY, WHEN YOU HAVE FRIENDS LIKE THESE?

These two ladies are the epitome of cool. Nomalanga Ntuli and Kay Morgan are two people who definitely make my heart skip a beat or ten...

'The Blonde Blacks' rock my world'- We went to Beluga for my birthday this past December and oh what a beautiful day it was. Thank you to my sister, Actress/Producer/Writer, Rori Motuba for organising an amazing, boozy, fun-loving, perve-igniting lunch; at one of Cape Town's finest dining spots, BELUGA. I have frequented this restaurant since I was a teenager and all I can say is that the quality of this exciting place has sky-rocketed over the past few years.

One of the best qualities of Beluga, is their 'half-price sushi' deal which is available to all of us every Tuesday :) WINNING!

 Next time you are in Cape Town, please try and eat here and if you have already tried it out, then you know exactly how I feel about Beluga and everything that it has to offer. Lucky for me, the head chef is an amazing man and I hope to work with him in the near future.

My friend Ato Aful shared this poem with us today and I just felt it to be so special that it has made its way to my blog. Quite fitting for the way that I have been feeling as the year draws to a close. I have had many revelations of love, life and general spiritual enlightenment this year and I am happy that I have made it through what I would say is an unexpectedly difficult year. I love the people around me and the energy that they bring into my life. We should never forget to stand alone in our beings, for we die alone at the end of the day and that is a reality that most of us are unwilling to face, daily. I choose perseverance... It is the substance of my soul.

IF...

If you can keep your head when all about you
Are losing theirs and blaming it on you,
If you can trust yourself when all men doubt you,
But make allowance for their doubting too;
If you can wait and not be tired by waiting,
Or being lied about, don't deal in lies,
Or being hated, don't give way to hating,
And yet don't look too good, nor talk too wise:
...

If you can dream - and not make dreams your master,
If you can think - and not make thoughts your aim;
If you can meet with Triumph and Disaster
And treat those two impostors just the same;
If you can bear to hear the truth you've spoken
Twisted by knaves to make a trap for fools,
Or watch the things you gave your life to, broken,
And stoop and build 'em up with worn-out tools:

If you can make one heap of all your winnings
And risk it all on one turn of pitch-and-toss,
And lose, and start again at your beginnings
And never breathe a word about your loss;
If you can force your heart and nerve and sinew
To serve your turn long after they are gone,
And so hold on when there is nothing in you
Except the Will which says to them: "Hold on!"

If you can talk with crowds and keep your virtue,
Or walk with kings - nor lose the common touch,
If neither foes nor loving friends can hurt you,
If all men count with you, but none too much;
If you can fill the unforgiving minute
With sixty seconds' worth of distance run,
Yours is the Earth and everything that's in it,
And - which is more - you'll be a Man, my son!

NAMASTE!

Yoga of Awareness with Dr. Melissa West - Full Free Class.

I really enjoy the art of Yoga, but I find that I do not always have the time to attend classes during the day. These videos are great, because they are practical and thorough, it's like having a personal instructor, come to your home. FOR FREE! Well, almost.

One of the best qualities of Yoga, in my opinion is that it really does have an effect on the way in which we choose to see our bodies. It is a practise that I wish never to give up and it really does allow for one to reach a higher frequency of living. Simple, mundane tasks like walking up the stairs or sitting in a chair, become more focused. The all-round well-being of this form of exercise is untouchable and I am so happy to have fallen in love with Dr Melissa, who is a genius instructor, with a great sense of spirit.

I hope that you will enjoy these as much as I have.

Namaste, every day!

Best,

Salmon Fishing In The Yemen!

This past weekend was amazing. Besides the time I spent bonding , I was blessed to discover that there is a fish market six kilometres from my home :) CAN YOU SAY HELL YEAH! I was on my way home, on Saturday night, after spending some time with my Chouchou, Christelle Veringa. I remembered that I had forgotten to buy toilet paper and dish washing liquid, on my earlier conquest of grocery shopping. We all know that if we are privileged enough to consume such paper, not having any can lead to multiple problems within a residence.

As I went dizzily up and down every aisle (This tends to happen in the supermarket... I could spend hours there), I happened to come across the tiniest fish market I had ever seen. My eyes saw dollar bills and I immediately calculated how much fish I could buy in one go. WINNING! I ended up buying two brave pieces of Sole (YUM) and two very healthy and fresh pieces of Norwegian Salmon (YUM). I was so lucky to find such upon its delivery, said the fishmonger, who was about to close his stall for the day. 'Who is all of this fish for', he asked me and of course I responded cordially and said 'Myself'. I love seafood with all my heart and I would like to extend a warm welcome to you all to join me in celebrating the execution of what I believe to have been a great dinner.

Tonight, I chose to serve my sister, Rori Motuba - Film and Acting extraordinaire:

Norwegian Salmon stacked on a bed of fresh rocket and full-moon roasted potatoes; finished off with some deep fried shrooms (mushrooms), peppers and an onion-red wine cream.

I started with the prepping my work this afternoon by dicing my Salmon and placing it in a bowl to sit in:

1t of brandy
2T of cream
Parsley
Black Pepper
Three portions of freshly squeezed Lemon Juice and
Some Olive Oil

I placed this in the fridge to chillar (chill) for a few minutes short of three hours.

I started off my meal by thinly slicing some potatoes in full-moon shapes and placing them in a baking dish to roast in the oven. I seasoned them with some mixed herbs, rosemary, black pepper and a pinch of salt.

DESOLE, j'ai oublie de prendre la foto de cette (SORRY, I forgot to take a photo of this)

I then coated my mushrooms in some egg white and sauteed them in some soy sauce. Once they were almost raw, I placed the shrooms in some lightly curried powder mixed with Southern Coating.

NEXT STEP... DEEP FRY BAYBAY!

You should deep fry your mushrooms for no longer than one minute and forty-five seconds ;)

Whilst I awaited my shrooms, I decided to saute some peppers in my original pan, seasoning them with some rosemary.

By this stage of my process, my potatoes were almost crispy, crunch and ready to come out :)

I chose to use the same fryer throughout every step of the way, without rinsing, because i feel that there is no better way to sew together, the extraordinary flavours of such a meal, than to cook it using the same aromas throughout.

I created a creamy red wine and onion sauce to compliment my dish, based of a purple haze gravy that my sister once made me, using: red wine, cream and lemon juice. I decided to saute some onions into this sauce to balance out the crunchiness of my gravy with the zesty texture of its taste.

TIME FOR SOME ACTION!

I placed my salmon and marinade inside my pan and lightly sauteed it for about two-three minutes on each side.

I added some capers to my pan which I placed in the oven to allow for the moisture to infiltrate the souls of the sea.

Once I had plated the base of my dish, I felt ready to add the final touch in adding the Norwegian salmon to the mix et voila, c'est bien comme ca :)
