7th Bang!

Mid-Day Munchies
(Before you start, pre-heat your oven to 180 degrees Celsius)



A light snack for those who enjoy the simplicity of life.




Ingredients:



1 slice of bread of your choice (I recommend rye bread)
1/2 a tomato
1/2 an onion
Chopped mushrooms (shrooms are the future)
2T of Balsamic Vinegar
Olive Oil
Fresh Ginger
Fresh Garlic
Fresh Coriander
Dried Parsley
Black pepper
1 Egg (WE LOVE EGGS, YES WE DO)
Hot sauce/Chillies (OPTIONAL)
Feta cheese




Step 1:



Chop your vegetables into any shape of your choice. I chose to wedge the tomatoes, Julienne (my favourite) the onions, and slice the shrooms.








Step 2:

Crush some fresh ginger, garlic and coriander and add to a heated pan, laced with Olive Oil















Step 3:



Place your bread in the oven to toast for approx 7 minutes or until it is toasted to your heart's desire



Step 4:



Sautee your vegetables in some crushed ginger and garlic










Step 5:



Add some black pepper, dried parsley to your pan and sautee for 3 minutes










Step 6:



Add 2T of balsamic vinegar to your pan and sautee at a lower heat until your mixture is moist and relatively soft



YOUR BREAD SHOULD BE READY, YOU MAY REMOVE IT FROM THE OVEN AND TURN THE OVEN OFF.









Step 7:



Spread some mayonnaise (BEST SAUCE EVER) onto your toasted bread.










Step 8:



Sprinkle some feta cheese into your pan and mix it in so that some of it melts







Step 9:



Fry your egg (I only eat egg whites, but each to his own) in a clean pan until it is prepared to your satisfaction






Step 10:



Dish your vegetable mixture onto your slice of bread and top off your open snack with your fried egg.













OPTIONAL: DRIZZLE WITH SOME HOT SAUCE OR SPRINKLE WITH SOME FRESH CHILLIES.
